French Onion Soup
Rich, caramelised onion soup topped with a crusty crouton and melted Gruyère cheese.

Slice onions thinly. Cook in butter over low heat for 45 minutes until deeply caramelised.

Add garlic and flour, cook for 2 minutes.

Pour in beef stock and white wine. Simmer for 20 minutes.

Ladle into oven-safe bowls. Top with crusty bread and Gruyère.

Broil until cheese is bubbly and golden.
Notes
Low and slow is key for the onions – don't rush the caramelisation.
