Chickpea Curry

A warming, spiced chickpea curry with coconut milk, spinach, and fragrant basmati rice.

Toast cumin, coriander, and turmeric in a dry pan until fragrant.

Sauté onion, garlic, and ginger until softened.

Add spices, chickpeas, and coconut milk. Simmer for 20 minutes.

Stir in spinach and cook until wilted.

Serve over fluffy basmati rice with fresh coriander.
